Looking for a way to switch up your Taco Tuesday tomorrow? I have just the thing for you, and it is somewhat healthy! Switch out your taco shell for a bell pepper for some taco stuffed bell peppers.
Ingredients:
- 4 medium green peppers, halved
- 1.5 lb ground beef, browned
- 1 packet taco seasoning mix
- 1-1/2 cup cheddar cheese
- 1/2 cup salsa
- Taco toppings
Assembly:
Step 1: Brown the ground beef (or turkey) until cooked through. While ground meat is cooking, clean out bell peppers and cut in half.
Step 2: Add the taco seasoning and water and cook according to recipe or packet instructions.
Step 3: After the meat is cooked, mix in salsa and 1 cup of the cheddar cheese.
Step 4: Place cooked peppers inside the dish and generously stuff with meat and cheese mixture.
Step 5: Top with remaining cheese and bake 350 ° F for 20-30 minutes until peppers are heated through and cheese is melted.
Step 6: Serve with your favorite taco ingredients and a side of salsa. Enjoy!
