Vegetables seem to be a difficulty in our household. Nick is constantly saying that we need to eat more vegetables, so I decided to branch out and try some veggie recipes that could accompany our dinners. One of my favorites has become the roasted balsamic brussel sprouts.
Step 1: Cut the root off of each Brussel Sprout and then cut it in half.
Step 2: Cover the bottom of the skillet with olive oil and lay the halved Brussel Sprouts out.
Step 3: Sprinkle a little bit more olive oil on top of the sprouts.
Step 4: Cook covered over medium heat for about 5 minutes, then flip the sprouts.
Step 5: Continue cooking on the opposite side of the sprouts for an additional 5 minutes. When finished, flip them back over so that they are laying flat in the skillet again.
Step 6: Reduce the heat to low and pour in enough balsamic vinegar to cover the bottom of the skillet.
Step 7: Cook the balsamic sprouts for 3-4 more minutes and enjoy!
