A quick and easy texmex dinner recipe.
1 can black beans (drained and rinsed)
1 cup corn
⅓ cup salsa
2 tbsp taco seasoning
1 cup shredded cheese
Step 1: In a bowl mix beans, corn, salsa, and taco seasoning
Step 2: Place tortilla in skillet, scoop half cup of filling onto tortilla
Step 3: Sprinkle ¼ cup of cheese over mixture and cover with second tortilla
Step 4: Press down on tortilla, when bottom is brown then flip
Step 5: When both sides are brown, cut into wedges and serve
**Bean mixture can be frozen or quesadillas can be frozen. Microwave 30-60 seconds and follow cooking directions above.
