A yummy and healthy dinner recipe that takes about an hour total for prep and cooking. We make this pretty frequently since everything is made in one pan and it is pretty easy to make.
4 potatoes (quartered)
4 cloves garlic
4 chicken breasts
3 tbsp olive oil
Salt and pepper
2 tbsp light brown sugar
Red pepper flakes
Step 1: Preheat oven to 425 degrees
Step 2: Toss potatoes in olive oil, salt, and pepper. Spread in baking dish and bake for 25-30 minutes.
Step 3: Heat olive oil over medium heat. Add garlic and cook for 2 minutes. Remove from heat, stir in brown sugar, lemon juice, and pepper flakes.
Step 4: Remove potatoes from the oven, push potatoes to the sides and put chicken in the middle. Season with salt and pour garlic mixture on top.
Step 5: Return to the oven and cook another 20 minutes
Step 6: Remove from oven, slice chicken, serve with pan juices.
