With summer and my wedding coming up, I have started cooking healthier meal options. After getting a recipe exchange email, I figured why not start a new healthy recipe series on here. So many people look for better, healthier options to dinners, and with everyone staying home it is easier than ever to look and try some new recipes. I figured I would start with an easy one, and it just so happens to be one of my favorites. This is a great recipe because it takes less than half an hour to prepare and cook.
Ingredients:
2 large chicken breast cut into strips
2 tbsp olive oil
1 yellow onion diced
14 oz can diced tomatoes
¼ cup of water
½ tsp dried oregano
1 tsp dried basil
½ tsp pepper
½ tsp salt
½ tsp garlic powder
1 cup spinach packed tightly
Assembly:
Step 1: Put olive oil in a pan on medium to high heat. Add chicken strips and cook until brown (10 minutes).
Step 2: Add diced onion and cook until soft (3-5 minutes).
Step 3: Add undrained diced tomatoes, water, and seasonings. Bring to a boil. Cover and simmer for five minutes
Step 4: Add spinach and stir until spinach starts to wilt.
Step 5: Serve with rice and enjoy!
