Chicken, Quinoa, Spinach Recipe

This is one of my favorite things to eat and it’s pretty easy to cook. It doesn’t take many ingredients and is a quick and easy dinner that my fiance and I both love. 


Chicken thighs 

½ tsp cajun seasoning

2 tsp olive oil

1 cup quinoa

1 ½ cup spinach leaves

½ tsp salt and pepper

½ yellow onion diced

2 cups low-fat chicken broth


Step 1: Season chicken with spices

Step 2: Heat olive oil and add chicken. Cook for 2 minutes on each side and remove from the skillet

Step 3: Heat onion (4-5 minutes), stir in quinoa and broth. Bring to a boil, cover, reduce heat, and simmer for 15 minutes.

Step 4: Cover the chicken with quinoa and cook until liquid is absorbed (15 minutes)
