Bruschetta Chicken

I recently stumbled across a recipe for bruschetta chicken and when we tried it I made a few tweaks to the recipe. It is delicious and we loved every bite!


Thin-cut Chicken Breasts

Salt and Pepper

2 tsp garlic powdere

2 tsp Italian seasoning

1/3 cup chopped basil (fresh is the best)

Parmesan cheese

2 tbsp olive oil

Diced tomatoes

1/2 red onion

2 cloves of garlic

Balsamic vinegar


Season the chicken on both sides with the salt, pepper, garlic powder, and Italian seasoning.

Heat 2 tbsp olive oil in a skillet over medium heat. Add the chicken and cook for 4-5 minutes.

While the chicken is cooking you are going to make the tomato mixture; mix 1 tbsp olive oil, half the can of diced tomatoes, onion, garlic, and basil.

Pour the other half of the diced tomatoes over the chicken, and cook for another 4-5 minutes (or until chicken is completely cooked).

After chicken is finished, divide the tomato mixture among the chicken, placing a big scoop on top and finishing it off with some balsamic and parmesan cheese.

This was a great summer recipe for us, super refreshing with the tomatoes and basil! We ended up eating it over some rice and really enjoyed it!
