With all the unusual chilly weather hitting us this week, Nick and I have been eating lots of chili! This is one of my favorite chili recipes because it is low calorie, super tasty, and super easy! We make this pretty frequently and it is a quick chili that doesn’t have to cook all day to still taste great!
1 can black beans
1 clove of garlic
½ cup chopped yellow onion
1 cup uncooked quinoa
1 bell pepper diced
1 ½ cups corn
1 can diced tomatoes
1 tbsp chili powder
3 cups low sodium chicken broth
½ tsp salt
1 tbsp olive oil
⅛ tsp cayenne pepper
1 tsp ground cumin
Step 1: Saute onion and pepper with olive oil for five minutes.
Step 2: Add garlic and cook for about 30 seconds.
Step 3: Stir in stock, diced tomatoes and juice, quinoa, and spices.
Step 4: Simmer over medium heat for about 20 minutes.
Step 5: Add corn and black beans and cook for 5 minutes.
